One of the most celebrated rice delicacies, Biryani needs no introduction. Glistening grains of perfectly cooked rice teamed with succulent morsels of meat intermingling with myriad spices and ingredients. The waft of a freshly made biryani is enough to cast an enchanting spell, one that’ll make it hard, or rather, impossible, to resist.

A dish introduced by the Mughals and the Arabs in India, Biryani witnesses a wide variation across the country including Hyderabadi biryani, Awadhi mutton biryani, Lucknowi biryani, Calcutta biryani et al– all with their own unique flavour profiles.

And if you’re in a hunt for a place that’ll deliver the perfectly prepared Biryani, right to your doorstep, in the most authentic way possible, then look no further than The Biryani Project. A result of 2 years of research, TBP aims to acclimatise the palate of Delhi, with a selection of Biryanis, cooked and served in the handi, or earthen pot, itself.

My tryst with their Hyderabadi Biryani and Godavari Biryani turned out to be an experience that’ll surely not fade away anytime soon. Accompanied along with a jar of raita, both the biryanis were excellent in their own decided decadence.

Having the quintessential punch of flavour and spices, generously topped with bits of fried onion and strands of saffron, the Hyderabadi Biryani hit the chord with the spice intensity. My complaint with places doing biryani in Delhi not serving enough meat were taken care of by TBP, by offering enough meat to be demolished with the fragrant rice.

And though it might not be correct to compare, if given an option, I’d bet my money on their Godavari Biryani. Hailing from the Godavari district of Andhra Pradesh, the biryani had pan fried morsels of chicken, generously coated in a fiery masala paste, layered with fluffy rice, with a predominant kick from the curry leaves. If you relish spiciness, this has to be the go-to biryani.

Overall, the delivery from TBP, instead of turning as just a dinner, turned out to a biryani fiesta, where everyone, though satiated, was left with an aching to have more! I’d be happy to see them introduce salan and maybe, a dessert or two, to offer a complete package of an experience.
